There are some dinners that require a long ingredient list, several pans, and more patience than I usually have available on a weeknight.
This is not one of them.
These barbecue chicken thighs are coated in a sweet, smoky dry rub and cooked until the outside is deeply caramelized and the chicken stays tender and juicy inside. I usually make them in a cast-iron skillet because I love the crust it creates, but the same recipe works beautifully on the grill.
The rub has plenty of flavor on its own, so there is no need to cover the chicken in barbecue sauce afterward. That is exactly how we like it around here.
Why This One Works
Boneless, skinless chicken thighs are forgiving, flavorful, and much harder to dry out than chicken breasts. They also cook quickly, which makes them a good option when dinner needs to feel substantial without taking all evening.
The dark brown sugar helps the outside caramelize, while the paprika, chili powder, garlic, onion, ginger, mustard, cumin, and cayenne build a smoky, slightly sweet flavor with just enough heat.
Cooking the chicken over medium heat gives the thighs time to cook through without burning the sugar in the rub. The result is deeply seasoned chicken with crisp, caramelized edges and no sticky sauce required.
