There is a point near the end of summer when I start wanting dinners that feel a little cozier, but I am not quite ready for anything too heavy.
This creamy spinach pesto chicken pasta lands right in that middle ground. The fettuccine and creamy sauce give it that comfort-food feeling, while the grilled chicken, spinach, basil, garlic, and a little lemon keep everything tasting fresh.
The pesto is completely nut-free because that is simply how I prefer it. Spinach makes up most of the base, with just enough basil to give it that familiar pesto flavor without taking over the whole dish.
