Some mornings, sitting down to a full breakfast just is not going to happen. Somebody cannot find a shoe, somebody forgot something upstairs, and somehow everyone needed to leave five minutes ago.

These little breakfast bites are made for those mornings.

They start with pancake batter flavored with dark maple syrup, then get filled with scrambled egg, cheese, and meat. Everything gets baked together in a mini muffin pan for an easy, sweet-and-savory breakfast.

Dark Maple Bacon, Egg & Cheese Breakfast Bites
Makes about 24 mini breakfast bites.

Ingredients

  • 1½ cups complete pancake mix
  • ¾ cup milk
  • 3 tablespoons dark maple syrup
  • 2 large eggs
  • 1 teaspoon butter
  • ½ cup cooked meat of your choosing, finely chopped
  • ½ cup finely shredded cheddar cheese
  • Nonstick cooking spray
  • Extra dark maple syrup for serving, optional

Directions

1. Preheat the oven to 400°F and lightly spray a mini muffin pan with nonstick cooking spray.

2. Stir together the pancake mix, milk, and dark maple syrup until just combined. A few small lumps are fine, so there is no need to overmix it.

3. Melt the butter in a skillet and scramble the eggs until just cooked through. Keep them slightly firm since they will finish heating in the oven.

4. Spoon about 1 teaspoon of pancake batter into the bottom of each mini muffin cup.

5. Add a little scrambled egg, meat, and shredded cheddar to each cup.

6. Top each one with another 1 to 2 teaspoons of pancake batter. The filling does not need to be completely covered.

7. Bake for 10 to 12 minutes, or until the pancake portion is puffed and lightly golden.

8. Let the breakfast bites cool in the pan for a few minutes before removing them.

Serve them warm as they are, or add a little dark maple syrup on the side for dipping.

Make Them Your Own

Use whichever meat works best for your household, and feel free to use a different good melting cheese if that is what you already have in the refrigerator. You can also leave the meat out completely. The point is to make breakfast easier, not to create another recipe that requires a special trip to the store.

Make Ahead & Freeze

Let the breakfast bites cool completely before storing them.

Keep them in an airtight container in the refrigerator for a few days, or freeze them in a freezer-safe container or bag for up to 2 months.

When you need breakfast, grab however many you want and microwave them in short intervals until warmed through. If they have been thawed overnight in the refrigerator, they will heat even faster.
